Weekend Menu Planning: Cooking Vegetables on the Grill for National Barbecue Month

We're still talking about grilling in honor of National Barbecue Month, and this week it's grilled vegetables, probably hands-down my favorite thing to cook on the grill. Grilling gives vegetables the same type of sweet, concentrated flavor that roasting them does, and if you have family members who are reluctant to eat vegetables, grilling the veggies might make them change their mind!

If vegetables can be sliced into pieces big enough to not fall through the grill, they can simply be brushed with olive oil, seasoned with salt and pepper, and grilled on each side until grill marks appear and the vegetable is cooked through. But if you want to grill vegetables in smaller pieces, it's worth investing in a grilling pan. Lots of grilled vegetable dishes use assorted vegetables cooked together on the grill, like the kabobs of Grilled Vegetables above from Our Life in the Kitchen. Karen says this is so ridiculously easy to make that it's hardly worth calling it a recipe, but you won't think that when you taste the grilled vegetables.

Finally, asparagus is wonderful when it's grilled and Grilled Asparagus with Parmesan is a big favorite at my house. You'll have to invest in a grill pan for cut-up asparagus, but whole asparagus spears can just be laid across the grill if you turn them carefully. Trust me, grilled asparagus is worth the trouble.

Grilled asparagus is the best! And I love grilled peppers too, especially when you grill, remove the skins, and eat dressed with olive oil and chopped basil!

I used to live near the Gerrard India Bazaar in Toronto. There was always grilled corn available. They'd rub it with limes and spices. Totally yum. I can't wait to move and get our bbq hooked up so I can try making it at home.
