Weekend Menu Planning: Give Zucchini Bread Some New Respect!

Zucchini can be a garden vegetable that doesn't get much respect this time of year. In fact, coming up on August 8 is Sneak Some Zucchini Onto Your Neighbor's Porch Day, a yearly holiday for anyone trying to deal with an overabundance of zucchini from the garden. Giving away zucchini may be a good solution, but personally, I'd suggest making zucchini bread, one of the most delicious ways to turn too much zucchini into a good problem to have.
Zucchini bread is classified as a quick bread, meaning, the leavening ingredient is baking soda and/or baking powder, not yeast, making it easy enough for everyone to bake it successfully. If you're looking for a summer kitchen project, this would be a fun thing to make with kids. You can use muffin tins to turn the bread into zucchini muffins, and if you have a toaster oven, consider using that to bake the bread so you don't have to heat up the kitchen.
Zucchini bread can be sweet or savory, with endless ideas for ingredients to add interest, such as chocolate chips, nuts, fresh or dried fruits, vegetables, cheese, onions, or herbs. Whether or not you have an excess zucchini problem, here are some creative zucchini bread recipes to try this weekend.
Let's start with the Savory Zucchini Bread with Cilantro, Scallions, and Cheddar from Food Blogga, where I love the use of pepitas to go with the South-of-the-Border flavors. Madeline's Adaptions also has a tasty-sounding Savory Zucchini Bread that includes onions and Parmesan.
At Baking Bites, Nicole used cocoa powder and chocolate chips to make Double Chocolate Zucchini Bread, a sweet bread which Nic says is more like a cake. There's another good-sounding version of Chocolate Zucchini Bread at Amanda's Cookin'.
You can get pretty creative with the flavorings for zucchini bread, and I love the sound of Cardamom Coffee Zucchini Bread from Steamy Kitchen. I think I'd also like the Whole Wheat Blueberry Zucchini Bread from My Baking Addiction.
If you want to eat with your hands, turn your zucchini bread into muffins like the Zucchini Muffins from Simply Recipes. A vegan muffin option is Zucchini Muffins with Cinnamon Crumb Topping from Fat Free Vegan Kitchen.
There are also a lot of good ideas for zucchini bread that are gluten-free, such as the Gluten Free Chocolate Zucchini Bread from Gluten Free Easily, which uses a gluten-free flour mix. The Grain Free Coconut Flour Zucchini Bread from Joyful Abode would be another gluten-free zucchini bread.
