Weekend Menu Planning: Have You Tried Cooking Quinoa?

Sometimes I sort of feel like a failure as a food blogger, like recently when a reader commented that it would be nice to see more recipes using quinoa. I had to admit to myself that even though I'd had good intentions about quinoa for the last few years, I've only used it once -- and that time I realized I didn't actually know how to cook it. Then, in that very odd way that the internet works, I started seeing interesting-looking quinoa recipes popping up on blogs everywhere. I decided if I need a bit more encouragement to use this uber-nutritious ingredient, maybe other people did too, so here are some quinoa ideas I hope you'll find tempting.

Let's start with a little basic quinoa information. First, it's pronounced keen-wa, and it's actually a seed with a nutritional profile that's closer to green leafy vegetables than grains. Quinoa is also one of the least allergic grain-like products, and quinoa flakes can be added to other flours for baking. It's very high in protein, but quinoa has many other impressive health benefits. It contains all nine essential amino acids, which makes it a complete protein, and quinoa has an especially high amount of lysine, as well as being a good source of magnesium, iron, copper, and phosphorus.

Most quinoa has to be rinsed before it's cooked or it will taste bitter due to a coating on the seeds. It's often cooked on the stove by combining one part rinsed quinoa with two parts water and simmering for about 15 minutes, but you can also cook quinoa in a rice cooker if you have one. Once you've cooked it, there are a lot of interesting recipe combinations to make with your quinoa.

At The Perfect Pantry, Lydia has a tempting-looking Black Bean, Quinoa, and Red Pepper Salad with Chili Lime Vinaigrette, and there's also a great mnemonic to help you remember how to pronounce quinoa, so check it out. (Thanks to Lydia as well for sharing the link for how to cook quinoa in a rice cooker.)

There are more black beans with quinoa at Mandika Moments, where Mandika says she has joined the quinoa craze. Her Quinoa and Black Bean Salad has tomato and green pepper, and some cilantro in the lime and chili based dressing.

For a different approach, I love the sound of Quinoa Salad with Pistachios and Cranberries posted by Linda Avery at Leite's Culinaria. This also has scallions and celery for a bit of crunch, and it's dressed with a sherry vinaigrette.

Quinoa also comes in red besides the regular tan-colored variety, and I thought the Red Quinoa Salad at Kitchen Parade was gorgeous, and Alanna has a lot of ideas for personalizing this salad to your own taste.

Another idea I thought sounded extra-interesting was the Ridiculously Easy Curried Chickpeas and Quinoa from Fat Free Vegan Kitchen. Susan shows them served as lettuce wraps in the photo above, and there's also a photo of the same filling inside pita bread.

Some time back I went to a fair-trade restaurant with some friends. I don't like cheese and beef so the only thing in the menu that I could order was this Quinoa-soup. I was very skeptical as I hadn't had quinoa before this. To my surprise I absolutely loved it. It was a hearty soup with lots of vegetable and quinoa and was quite filling.
I have googled and found a few quinoa soup recipes.

I haven't tried using quinoa as porridge, but I bet it's good.

I'm happy to report that I kept my promise and made a salad with quinoa this week, and really enjoyed it!

I am so excited to have found this post - I just used Quinoa in a recipe for porridge this past weekend.

The recipe called for farro, but my local coop didn't have farro. So, I substituted with Quinoa. It turned out delicious!

I'm a cook-in-the-making, and this link below includes the recipe for the Harvest Porridge I used the Quinoa in:

Thank you for posting such delicious looking ways to use this amazing food! I can't wait to try them!

On the Whole Story Blog from Whole Foods Market, they have great info on quinoa and even more recipes!

This summer, I think they also have a great pre-made quinoa salad for sale.

I introduced the seed into my family's diet about two months ago and we love it. I always prepare it in my rice cooker whether cooking with water or broth. I use it as a rice substitute (I made Quinoa Fried Rice on my blog) and as a basis for all sorts of salads. I usually throw in tons of veggies, a little olive oil, some spices, and serve cold or hot.

I've been cooking with quinoa for years. A great recipe to try is quinoa salad from Peter Berley's cookbook "The Modern Vegetarian Kitchen". Also any quinoa recipe by Nava Atlas who wrote the great vegetarian cookbooks "Vegetariana" and "Vegetarian Express" are worth trying

I've first tried Quinoa this year, and I like it!! Most Quinoa tells you to rinse it, and I've found the best way is to place 2 paper towels in a strainer to rinse it because the seeds are so small!
I love to cook my Quinoa in my rice cooker.

I have been rather crazy about quinoa for some time. I discovered after doing some online research about health and started cooking with it while trying to reduce my husband's cholesterol. One of my favorite recipes is a pink grapefruit quinoa salad that I found on the TV Food Network's website. Normally, I am not a fan of their recipes, but this one has been a keeper for quite some time. I like to add feta cheese and avocado. 101 Cookbooks does some great stuff with quinoa too!

Quinoa is delicious. I've prepared it as a pilaf, mostly, but it's so good in salads. That recipe for Quinoa and Black Bean Salad looks awesome and I'll definitely make that very soon...maybe today since I already have most of the ingredients.

Thanks for the nudge, Kalyn!

I tried quinoa for the first time a few months ago and love it. It's so versatile. During the winter, we used it in place of couscous for comforting side dishes. Now that it's getting warmer, I am excited to experiment with it for summery salads ... can't wait!
