Recently I've been slightly obsessed with persimmons, and it's all because of Twitter. You see, one night Andrea from Rookie Cookery was talking about her Fuyu persimmon tree on Twitter. When I confessed I'd never had Fuyu Persimmons, she offered to send me some when they got ripe. Several weeks went by, and then one day a huge box of persimmons arrived in the mail!

If you don't know about persimmons, the three main types that grow in the U.S. are Fuyu Persimmons, Hachiya Persimmons, and the smaller American Persimmons. They look similar, but what a difference! Fuyus can be eaten raw like an apple, stay good for a long time, and are delicious in all kind of dishes whether raw or cooked. American persimmons are tiny compared to the other two, need to be fully ripe when eaten, and are mostly used in desserts or preserves. Hachiya Persimmons are also mostly used in cooked dishes, and they are inedible until the flesh is very soft. If you bite into an unripe Hachiya persimmon, your mouth will pucker up, and you'll be very sorry! A few years ago my step-sister had given me some Hachiya persimmons and told me they would ripen in the freezer. I kept trying them (ick) and never did manage to use them for anything, so I was excited to try the Fuyu persimmons.

Not only did I love the Fuyu Persimmons simply eaten raw as a snack, but I've been making persimmon salads, persimmon cake, and even some kabobs with persimmons and roasted shrimp. Everything I've made with the Fuyu persimmons has been completely a hit, so I thought it would be fun to see what other food bloggers are cooking up with persimmons, and maybe convince a few BlogHer readers to try them as well.

Nicole from Pinch My Salt uses Hachiya persimmons to make her family's favorite Persimmon Cookies. Nicole says she like Fuyu persimmons too, but when she thinks of persimmons, she'll always think of these cookies.

At Food Blogga, Susan knows her persimmons, and cooks with both types but what caught my eye is her Persimmon Pomegranate Salsa. Susan served this over pork chops, but I think it would also taste great over chicken, fish, or tofu.

When she discovers a persimmon tree way back in her yard, Andrea from Andrea Meyers does some investigating and realizes it is an American Persimmon tree. Andrea gathers the persimmons and makes a tasty-looking Spiced Persimmon Cake with Dates and Lemon Glaze, which could also be made with Hachiya or Fuyu persimmons as well.

Another persimmon cake that looks fantastic is the Persimmon Pudding Cake with Saffron from Southern Grace Gourmet. Saffron can be hard to find (and you can probably leave it out) but from the description of this cake, I'd say it's worth looking for.

Finally, Dara from Cookin' Canuck lives near me in Utah, so I gave her a few of my Fuyu Persimmons to try. Dara used her persimmons to make Pan-Fried Brie Cheese with Persimmon Salsa Canapés, a perfect appetizer for this time of year.
