Weekend Menu Planning: It's Time to Make Some Butternut Squash Soup

How do you feel about butternut squash? Personally I never liked squash as a kid, but as an adult, I can't get enough of it, and I consider butternut to be the premium type of squash for roasting, using in casseroles, or for making yummy butternut squash soup. When variations of butternut squash soup start showing up on food blogs, you know Autumn is really here.

Every year I bookmark lots of recipes for creamy butternut squash soups, and then I end up roasting all my squash to serve as a side dish and never making the soup. This is the year I'm making some type of creamy butternut squash soup, that's a commitment. Now I just have to narrow down the recipe I want to use, and here are some I'm considering.

At The Perfect Pantry, Lydia loves to try out new spices by using them in a favorite recipe and recently she tried a spice blend called vadouvan in Butternut Squash, Apple, and Vadouvan Soup. I'm a spice-mix addict, plus Lydia has a link showing how to make vadouvan if you don't have any, so this is a recipe that looks like something I'd love.

I love curries with coconut milk, so this Coconut Curry Butternut Squash Soup from Not Eating Out in New York was another one that caught my eye. In this recipe I love the addition of lemon juice just before serving, and Cathy reminds us that all types of winter squash are interchangeable in recipes.

There's a slightly different version of Curried Butternut Squash Soup at Taste Food, and this one has some apple and a bit of brown sugar for added sweetness. Lynda says the original version of this soup came from The Silver Palate Cookbook, and she's tweaked the soup and made variations in the countries where she's lived.

I love roasted red pepper as much as I love roasted butternut squash so when saw Roasted Red Pepper and Butternut Squash Soup at Dlyn, that had to go in the bookmarks folder too. This soup has cumin, paprika, and chile powder, three more reasons I'd love to try it.

Finally, for a delicious version of roasted squash soup that's vegan and could easily be made with butternut squash, I have my eye on the Delicata Squash Bisque from Vegan Yum Yum. Lolo says this is the best squash soup she's made ever, and the use of cashew cream to thicken the soup and add richness sounds to me like it would make a very luxurious-tasting soup.

Love IT!

Great ideas here! I am a squash soup fan. Recently I made a simple version using chicken stock ( a hearty version made with fresh ginger) and I tossed in some cut up, peeled  butternut squash with some fresh parsley and fresh dill and cooked it, blended it -- served with a dollop of sour cream (low fat sc).

I have also made it using stock, apple cider and cut up, peeled and cored apples as an add-in. I found that sweet, and added a dollop of apple cider vinegar, and it was YUMMY. Next time I may try adding curry.

I've also made a simple version with chicken stock and squash and some cooked and frozen pumpkin fro last year. Also very good. That version is like a blank palette for seasonings.

Love the idea of using chicken stock with ginger for the squash soup!  All your versions sound good.

Yummy soups!

Wow what a marvelous collection of squash soup recipes you assembled. I wish I'd seen this last week! I was craving butternut squash soup and needed something simple with whatever I had on hand. I cobbled together the ideas I saw online and I came up with pretty good results. Here's my link for my own curried butternut squash soup. I was a week ahead!

I made butternut squash soup last weekend.  Roasted the squash.  Put a few leeks and thyme in butter and sauteed them for 40 minutes.  Mixed the squash and leeks with chicken stock, pureed with emersion blender and garnished with bacon, chives, and sour cream.  Next time, I'd thin out the soup a bit more.  It was a tad too thick for my liking.  I'm not the biggest squash fan, but I love soup.  Only problem is my husband won't eat it! :(

I'm not a fan of sweet combinations with squash, so the blend of leeks and thyme here sounds great to me!

Impossible to choose just one!

I've never met a squash soup I didn't love, so I'd hate to have to choose just one of these. Thanks for finding so many wonderful variations. There's a farm near me that sells more than 20 varieties of winter squash, at just $25 for as much as will fit in a bushel basket. I'll make sure to tuck some butternut squash into the mix.

I'd love to get a bushel of squash for $25.  It's never cheaper than about $.99 a pound here, and that's rare for it to be that low!
