It's that time of year when you're either overwhelmed with zucchini in your garden or tempted by low prices for them at the market. For people who like zucchini, doesn't it seem like there are endless good things to make with them? Here are some that caught my eye, but of course, I'm always on the hunt for one more good zucchini recipe, so if you have a favorite, please share a link or your recipe in the comments.

Let's start with this savory Zucchini Breakfast Casserole from Simply Recipes which includes zucchini, tomatoes, ricotta, parmesan, and basil. The recipe also has day old bread, plus a bit of hot sauce for zing.

Finally, The Italian Dish has an amazing-looking version of Zucchini Gratin with pancetta adding an extra flavor note. If you can't find pancetta, you can probably use thinly-sliced bacon in this recipe.

My tomatoes are having a rough time this year, due to a mishap with the sprinkling system that meant they went weeks without water early in the year. Now they're finally starting to come back but I don't have many tomatoes yet. Enjoy!

The breadcrumb crusted zucchini with chard looks incredible. I have to try that! I love how many ways zucchini can be used, and I recently thought a little about how its uses depend on its size. I used a large zucchini for mufifns in which it was grated so the starchiness didn't matter:

I just posted on my blog this week about a wonderful zucchini bread recipe that is so delicious!  I had been pouring through my cookbooks, looking for a really good recipe and I was excited to have found the best zucchini bread recipe!  If you have an over abundance of zucchini (as we had from our garden) and it seems to be getting out of control, this is the recipe for you.  I've already made about 13 loaves (of various sizes) from about 7 lbs. of zucchini.  I can't say enough about how good this recipe is--so here is the link: http://jilliciousdiscoveries.blogspot.com/2009/08/...

A couple of weeks ago, I opened my door to find an almost 3 ft zucchini sitting there.  It's been decorated and passed on to other neighbors but that's a good way to use them! :-P

The zucchini tempura is making my hungry.  I love good tempura.  My normal recipe for zucchini is pretty simple but it's tasty, good served warm, room temp or cold, and uses up those monster zucchinis that seem to appear overnight in the garden.
