Weekend Menu Planning: Make Some Potato Soup this Weekend

Spring is rumored to be on the way, but it's still definitely soup-making weather in most of the country. A classic soup ingredient that's usually on hand in most kitchens is potatoes, and soup with potatoes is nearly always a crowd-pleaser. My goal on Thursday night is to entice you to cook something from one of the BlogHer Food Network blogs, and if you like potatoes, I'm thinking one of these potato soup recipes should be on your menu for the weekend.

When you're having a weekend where the weather is so bad that even church is canceled, it's definitely soup-making time, so when that happened to her Mrs. W. came up with Sausage and Potato Soup (with spinach, always a bonus for me!)

Potato Leek Soup

Potatoes combine well with so many ingredients, and I think the Potato Leek Soup from Pinch sounds wonderful. Katie says if you skip the step of pureeing the ingredients, this can also be served as a rustic soup.

If you'd prefer a vegan version of potato and leek soup, the Healthy Vegan Potato and Leek Soup from The Happy Herbivore looks good, and I especially like the addition of dill.

It has flavors that really sound great with potatoes, and the Potato Bacon Parmesan Soup from Sunday Baker was inspired by one she loved at her favorite coffee shop.

Finally, a potato soup with many variations, and Andrea from Andrea's Recipes says no matter how she switches out the ingredients for Cream of Baked Potato Soup her husband and kids always make the soup disappear.

Thanks for the shout-out, Kalyn. I was so excited to see a potato soup recipe on my BlogHer sidebar and positively tickled to see my picture. :)

I'm always on the lookout for other healthy recipes. Pureed potato soups are wonderfuly creamy on their own, without added fats. Think you've convinced me to do more dishes and puree my rustic soup for dinner this week. Either that or refresh my miso supply and try the recipe above.

I have made this soup three times in the past week!  It is silky, rich, and yet totally dairy-free!  It can easily be vegan/vegetarian too:

My "homemade" potato soup is to embellish.

Boil some fresh pre-cut diced potatoes with onions. (usually in the dairy section)

In a seperate pan gently cook some fresh pre-cut celery, onions, garlic and carrots...(from the produce section) cook in a little chicken broth until tender.

Drain the potatoes and add to the cooked veggies (above)

Stir in some cream of chicken soup with herbs (do not dilute)depending on how much potatoes and veggies you have just add enough of the soup until the consitency is good...I also dilute it just a bit with chicken broth...play around with it and you'll get the perfect consistency.

Add some fresh parsley, chives, and some seasonings: Salt, White Pepper, etc. to taste

Finish by adding in some fresh shredded cheddar (I prefer white cheddar)

Serve with some fresh chopped scallions as a garnish and enjoy!

By getting some items already chopped and simply embellishing on partially premade items...it is a snap and still is so very good!

I make my mom's recipe of potato soup.  It's a reall down-home potato soup recipe, but it warms me up and reminds me of being a kid.

Peel and cut up 8-10 medium sized russet potatoes, one medium sized onion, minced, and two stalks of celery, thinly sliced and boil in mildly salted water until soft.

Pour out half of the boiling liquid and return to med-low heat.  Add just enough milk to almost cover the potatoes.  Add black pepper (I like quite a bit so I use between 1 and 1 1/2 tablespoons) and stir until soup is hot.  Add 6-8 broken up slices of American Cheese (yes, that stuff your kids put on their bologna sandwiches) and stirr until melted.  Serve hot.  

A great side to this is a grilled cheese sandwich.  For those of us who grew up a little poor, this kind of meal takes us back.   It's simple and wonderful.

Cook peeled and washed potatos until soft. Reserve liquid. Add mashed potatoes back into eough liquid to create a chowder like thickness. Add some chopped dill, salt, pepper. Keep hot.

In each individual serving bowl place a handful of orange grated cheddar cheese. Pour soup on top. Garnish with dill.

At the table have the following items for immediate addition to the soup by your guests, according to their tastes -- but they must add BOTH. Chopped raw onions. Red wine vinegar.
Stir, eat, delight!

This odd combination is fabulous.
