What's your take on quiche? Hopefully no one falls for that old line about how "real men" don't eat it, because quiche is a versatile dish the whole family can enjoy for breakfast, lunch, or dinner. It can be rich and decadent for a special occasion, or you can lighten it up if you prefer. You can even make vegan quiche without eggs, or lower-glycemic quiche with whole wheat flour, depending on what you want. And rather than being just a dish, quiche is really a category, because the choices for fillings are endless.

If you've never tried making quiche at home, you might be surprised how easy it is to turn out seriously delicious results. Here are some quiche ideas from a few of the BlogHer Food Network blogs that might make a great menu option for the weekend.

Crustless Spinach Quiche

If you're not sure about the idea of making pie crust, this Crustless Spinach, Onion, and Feta Quiche from Baking Bites might be something you'd like. The quiche does have a crust of sorts, but it's formed when the flour mixed into the egg mixture settles on the bottom and creates a crust, so this is an easy option.

A slightly different take on crustless quiche is the Crustless Quiche with Tomatoes, Zucchini, and Salami from Modern Beet. Inspired by quiche from Tartine restaurant in San Francisco, the addition of creme fraiche makes this creamy and delicious.

Dianne from Dianne's Dishes discovered you can make tasty quiche using a pie crust made from whole grain flour when she used White Whole Wheat Flour to make this Whole Grain Zucchini and Mushroom Quiche. This quiche also uses lower-fat cheese to make it a lighter option.

Finally, for a vegan quiche option, these Mini Crustless Tofu Quiches from Fat Free Vegan Kitchen look delicious. The filling is flavored with garlic, bell pepper, mushroom, chives, and rosemary with silken and tofu standing in for the eggs.

My favorite quiche recipe always reminds me of the last fall I spent living in Chicago before leaving for Los Angeles. It's amazing how weather greatly changes one's eating habits!

Thanks for the recipe roundup - I completely agree with you about quiche being a category rather than a dish. Like casseroles or pie!

A friend of mine gave me a tip (that I've been dying to try out) to use grated potatoes for the crust instead of pastry. It has the added advantage of being gluten free.

Haven't heard of yufka so thanks for that tip. Always love hearing about new foods. Frozen filo with quiche filling sounds heavenly to me!

Quiche is my GO-TO food.  I love it!  You have to host a brunch?  Quiche.   You forgot you were supposed to bring a dish to pot-luck?  Quiche. I love it and it is SO versatile.  I am living abroad now and cannot buy pie crust, and am too lazy to make it from scratch.  However, quiche is forvgivng enough to let me use yufka, a savory dough similar to fillo dough, and it comes out perfectly.

One of my commenters was saying how he loved quiche too and how he had to get over the whole 80's Real Men Don't Eat Quiche thing. That book impacted quiche eating for twenty years!

For me I think it's the desire to avoid white flour, but now that Dianne has given me the idea to try white whole wheat flour, I'm thinking crustless quiche is going on the menu!

I'm so sorry, but I don't like quiche!  Not the kind with crusts anyway.  I LOVE frittatas....does that count?  No...probably not.  These recipes look so nice, but I just can't.  Perhaps it was bad childhood experiences that drove me to this?  :)

One of my things to do to save money is eat at home.  So I decided I would eat well.  Every weekend I make someting to freeze.  Normally I make 3 to 4 with different fillings. After they cool I slice them, wrap in saran, put in a freezer bag and label them.  They are great for any meal during the week or as a snack at night.  I do use the frozen pie crust in the tin and they stack great in the freezer. If I take them to a potluck I put them in my pie plate.  :)

Quiche is a go-to recipe for me, especially when I'm asked to bring something to a potluck.

My base recipe is from Julia Child's Mastering the Art of French Cooking and I usually fill with spinach and top with sliced tomatoes which makes for a pretty as well as tasty tart. My lazy gourmet approach however means I use fold up pie crusts (either Pillsbury or from Trader Joe's) rather than make my own. Heresy I know but nobody has ever complained while eating ;)

Quiche is so delicious, I can even eat it cold or if it's been sitting out for hours, hahaha. Not safe maybe. In my experience, guys will eat anything these days, especially the real ones. Especially if you say it's Giada's recipe because they all love her :-)
