Weekend Menu Planning: Think Outside the Box with Homemade Macaroni and Cheese

When summer ends and families have to get back on a school night dinner schedule, what's needed are easy menu options the kids will eat. Kids love macaroni and cheese, and even when you make the kind that comes in a box it's probably a more nutritious dinner option than fast food. But macaroni and cheese is so easy to make with real food ingredients, it's worth trying a few recipes to find a nutritious homemade mac-n-cheese to add to your dinner rotation.

I don't see how you could go wrong with the recipe for One-Pot, Stove-Top, Creamy Mac-n-Cheese from Todd and Diane at White on Rice Couple. Macaroni is cooked on top of the stove in low-fat milk, the tiniest bit of butter is stirred in, and then cheese is melted in at the end. Really, what could be easier, and doesn't that sound good?

Another easy-peasy option for macaroni and cheese is the Crockpot Macaroni and Cheese from Stephanie at A Year of Slow Cooking that cooks in about 90 minutes on high. Steph says this tastes just like macaroni and cheese should taste and her kids each ate two bowls.

YIt sounds like your mom had a great recipe.  That's how my mom made it too, and you should definitely make homemade mac-n-cheese with the grandkids.  (Even if they end up not liking it!)

Have you ever been to Fleming's Steak House and had their Chipolte Macaroni and Cheese.  It's roll your eyes back in your head good.

Use to start with a white sauce, melt in some cheese and then mix it with already-cooked macaroni. She put that into the oven so the top could crust up a bit. Very yummy. I make my grandkids cook their own Easy Mac in the microwave. They will probably never know what home made mac and cheese even tastes like. I should fix that.

I'm always on the search for the creamiest mac and cheese, and I'm always trying different add-ins. My favorite at this time of year is hatch chile mac an cheese!

Now I haven't tried this myself, but I always figured that when I get around to making lobster mac and cheese this is the recipe I'd try. I can't see why it wouldn't work for crab too.

They all sound great! I love macaroni and cheese and am almost ashamed to say that even though I've tried different recipes of the home-made versions, my go-to guilty pleasure will probably always be the blue box. (I know, I know...It almost makes me feel like I have no place among my foodie friends.)

Having said that, my favorite home-made versions are the ones that incorporate lobster or crab. Do you have any suggestions for good, easy to make lobster or crab macs?
