Here at BlogHer, we've been counting down to National Soup Swap Day on January 22, so I hope you noticed good soup ideas if you're hosting or attending a Soup Swap. I love making soup, partly because it's warm and comforting during my least favorite time of year, but also because soup is a perfect way to use nutritious ingredients and make them taste amazing. Today I'm spotlighting soups with greens (spinach, kale, swiss chard) and grains (quinoa, barley, brown rice.) Each of these healthful ingredients can add flavor and nutrition to soups in a delightful way.

I have an overwhelming (and emotional) craving for my Grandma's beef barley now. I'm eyeing one of the recipes you have listed and wondering if I want to make any changes to hers. Dilemmas.
