When I was a kid my mom made green bell peppers stuffed with a filling of rice, hamburger, and tomato sauce, and I remember eating the filling but refusing to eat even a bite of the green bell pepper. Luckily our tastes mature when we grow up, and now I look forward to fall when enormous bell peppers start going on sale. Recently I bought some beautiful green bell peppers that were just begging to be stuffed, and when I did a search for stuffed pepper recipes, I was amazed at all the creative ideas I found for stuffed peppers.

If peppers are plentiful right now in your own market, here are some non-traditional and traditional ideas for stuffing them. If you already have your own favorite filling for stuffed peppers, please share your recipe or a link in the comments.

I just made a great recipe last week from Martha Stewart. The stuffing is a mixture of black beans, cornmeal, onions and cheese. It was a nice lighter substitute for the usual ground beef and rice filling.

I can´t wait to try some of these ideas - having used the same filling for years! That tuna fish-combo sounds especially delicious and I know I´d love to add chickpeas to my "old" recipes, too (though my kids - who eat the filling and not the peppers - probably wouldn´t agree!).

I usually add grated eggplant and/or zucchini - mainly because when the vegetable garden is filled with peppers I also have so much eggplant and zucchini that I hardly know what to cook!
I find grated eggplant a great minced meat replacement.

I think your filling with rice and mushrooms sounds great. Good idea to use a touch of Italian Seasoning in the rice!

I'm a vegetarian, but I still love stuffed vegetables.
I especially like stuffing them with rice, tofu and pine nuts.
First, I make the rice with bay leaves, salt and pepper, onions and garlic.
As the rice cooks, I whip up a tomato-based sauce. The sauce shouldn't be thick- it can even be watery.Usually I add jalepeno, lemon juice, tomato paste and salt and pepper to taste. Once the sauce is cooked, then I add fried tofu and roasted pine nuts to the rice.
Then, I fill peppers, tomatoes, and onions with the rice mix and place them in a glass roasting tray. I pour the tomato sauce generously over all of the vegetables. they should be "wading" in the sauce. Then I place the tray in the oven at about 200 and wait till the tops of the vegetables are roasted.
Yum! Perfect meal for a cold, rainy day!

My main stuffing is peppers. I fill them with the tops of the peppers, but also tons of hot peppers - jalapenos, habaneras, and the long light green kind. I also mix in chopped tomatoes, basil, garlic, onion, parmesan cheese, breadcrumbs, and the spiciest hot sauce I have at the house.

I saw this post of yours and it made me craved for this one. I don't cook a lot but I would suggest stuffing it with tuna, tomatoes, onions and some cheese on top. This is how I like my stuffing, just simple. Thanks for sharing these ideas.

My hubby is from New Orleans, and he turned me on to eating Dirty Rice. It's a beef, rice and pepper combination (that you can even find in Zattarin's rice mix) and tastes WONDERFUL! Sometimes on really good days, he will mix in some crab, shrimp and chicken to go with the beef. It's SO good when he puts the cooked rice mix into fresh peppers and bakes it in the oven. Once they come out, he tops them with a fresh slice of tomato (if wanted) and I melt into bliss every time!!!

I definitely appreciate stuffed peppers more now than I did in the past. I love the grain and bean mixtures for stuffing peppers, and it's a great dish for fall. The tuna version and the curry version are two I have to try!

All of this looks so appetizing. I serve hummus in bell peppers. But my favorite way is to stuff it with a paste made with chickpeas flour, Indian spices, garlic ginger, green chillies and tamarind water and then roast it. Yum!

My own mom's recipe for stuffed peppers wouldn't be the one I'd pick nowdays either. Stuffed cabbage, mmm. I need to try making that soon; it's been on my list for a few years now!
