Wheat Free Wednesday - 4/6
Happy Wednesday everyone! I've been giving some thought to a question about the need to flour something before it gets fried or sautéed. While I will often skip this step, sometimes it really adds to the appearance of the dish, or the texture of the sauce. The question was what to use when you don’t keep a gluten free flour blend on hand. I say use a light dusting of cornstarch, and, if corn is not an option, powder some oatmeal in the food processor or a coffee grinder. I have a coffee grinder specifically for non-coffee uses and it was well worth the $12!
It’s still cold and rainy here in Ann Arbor, so we’re starting off with a warm breakfast!
Gluten Free Breakfast
Baked Oatmeal, Canadian Bacon, Fried Apples. The oatmeal goes together very quickly and is very accepting of dried fruit and other spices. This is a great start to an active day!
Gluten Free Lunch
Grilled Turkey Sage Patties and Strawberry Spinach Salad. If you don’t have fresh sage use dried, but the resting time is critical to allow the flavors to meld. If you don’t like sage, other herbs work nicely as well. Ground turkey can be bland, so don’t under-season. The salad is really flavorful. If you don’t have poppy seeds you can omit them. If you have a Whole Foods near you, the poppy seeds are sold in bulk, in the Health and Beauty Department.
Gluten Free Dinner
Tilapia with Lime Sauce, Scallion Brown Rice, Ginger Ale Glazed Carrots. The fish is simple and tasty – and it’s a prime candidate for replacing the flour with the above mentioned cornstarch or oat flour because a light dusting not only helps the fish achieve an appetizing golden color, but adds a little body to the sauce. My kids didn’t really like carrots until they tried this recipe, and they like it even more now that I have replaced the ginger ale with fresh ginger, water, and a pinch of sugar.
