I was going to call this Mediterranean wild rice salad and thought wait wild rice grows in Minnesota right? Or at least I want to believe what I bought came from Minnesota. I’m not sure why. So I looked up Minnesota wild rice and sure enough you can buy Minnesota Wild Rice on ebay of all places. Let me know if you buy it. On that same page there was a listing for Ojibwa Ghost Wild Rice. It is supposed to have a delicious nutty taste. Has anyone heard of this kind of wild rice and if so is it good? 

I like to see really great titles for food. I wish I had one for this post but at least the recipe is satisfying and super quick to make. I might have to buy the Ojibwa ghost wild rice just for the title. I love it.

Ingredients

  • 2 shallots, chopped
  • 1 8.5 ounce package precooked wild rice (such as Archer Farms)
  • 1 roma tomato, chopped
  • 2 tablespoons balsamic vinegar
  • 1/2 tablespoon olive oil
  • 1/4 cup feta cheese
  • juice of 1/4 lemon
  • 1/2 can black olives, sliced
  • salt and pepper to taste
  • 1 tablespoon cilantro, chopped

Instructions

  1. Heat pan and spray with cooking spray
  2. Add chopped shallots and cook 3-4 minutes or until lightly browned
  3. Slightly open wild rice packet and heat for 90 seconds. That is what it says to do on the package
  4. Place wild rice in bowl and add tomato (save a little for garnish)
  5. Add next eight ingredients-balsamic vinegar, olive oil, feta cheese, juice of lemon, black olives, salt, pepper, and cilantro (save a little for garnish)
  6. Mix thoroughly and garnish with a little tomato and cilantro
