Whether you're planning a festive holiday meal, or just trying to make it through December without putting on too many pounds, winter salads can be a great way to enjoy seasonal foods such as beets, winter squash, apples, pears, and cruciferous vegetables.

For Christmas Eve dinner we're either going to have an endive, apple and stilton salad (with a sprinkling of walnuts) or we tested a roasted butternut squash salad with endive and blue cheese.  So yummy.

I have a hard time with winter salads -- glad to have some new possibilities. I have a Delicata Squash in the fridge just wanting for the right recipe, so I may have to try the one with farro.

I love to make a panzanella (bread salad) with the slow-roasted tomatoes we all make in the summer, combined with cucumbers, red onion and olives.
