We're rapidly approaching the time of year when people with gardens are desperately looking for new ways to use zucchini, so as a public service announcement for gardeners everywhere, I'm sharing these amazing sounding Zucchini and Feta Fritters that I spotted at All Day I Dream About Food. Not only are Carolyn's zucchini fritters a great Meatless Monday option, but they're also low-carb and gluten-free as well. And seriously, shredded zucchini plus feta, perfectly seasoned, made into fritters, and fried. I'm guessing the entire family will gobble these up.
