
This is part three of a series focusing on interesting ways to cook zucchini, designed to bring a smile to the face of veggie gardeners who are overwhelmed with the lovely courgettes. So far we've covered Zucchini Carpaccio and Fried Zucchini Variations, and we're saving zucchini bread and cake for last, so today let's see some of the many and varied ways food bloggers show their love for cooked zucchini.
I found wonderful zucchini recipes everywhere, on new blogs as well as on some of my favorites. There are certainly a lot more zucchini recipes out there, but here is a collection of more than thirty interesting ones. If you have a great zucchini recipe that should be part of this collection, leave a link or your recipe in the comments.
The lovely baby zucchini in the photo are from a post called Brown Butter Zucchini on Vegan Visitor, and yes, I did notice that it said butter on a vegan blog, and the actual recipe actually used margarine. But whether you use butter or margarine, this photo perfectly illustrates one thing that lots of food lovers realize about zucchini: the tiny baby squash have wonderful flavor.
At Tummy Treasure, I loved the sound of Cornmeal Crusted Roasted Zucchini Tart.
Susan at Fat Free Vegan Kitchen makes Shitake, Sweet Potato, and Zucchini Foo Yung. She also combines zucchini and mushrooms in a lovely dish of Gnocchi with Zucchini Ribbons and Portabella Mushrooms.
This next dish sounded so great, another food blogger has already recreated it. First Karina of Karina's Kitchen made Pesto Zucchini Tomato Gratin. When Emily of Superspark saw how good this looked on Karina's blog, she made her own variation of Summer Squash Tomato Pesto Gratin. (And if anyone who's not a food blogger is wondering if we mind when other bloggers do a spin-off on one of our recipes, the answer is absolutely not! Seeing how great recipes make the rounds is one of the fun things about reading food blogs.)
How quickly can you say Zucchini Ricotta Frittata? That's one of the great zucchini dishes I found on Simply Recipes, along with a simple but delicious-looking Zucchini with Thyme and Stuffed Zucchini with Ham and Mushrooms.
At 101 Cookbooks, Heidi creates a big bowl full of good flavor with her recipe for Quinoa and Grilled Zucchini.
You could expect to find zucchini recipes galore at A Veggie Venture, and there are plenty of them in the Alphabet of Vegetables. I especially loved the sound of Feta Stuffed Zucchini, Roasted Zucchini with Lemons, and Zucchini with Tomatoes and Cheddar.
At What Did You Eat, I'd like to taste Linguini with Zucchini, Capers, Lemon, Pine Nuts, and Herbs. Another great zucchini-pasta combo is Sher's Spagetti with Zucchini and Saffron. And more pasta, how about Gnocchi with Lemon Ricotta and Zucchini from Vegalicious, or Zucchini Carbonara from Closet Cooking?
Grilled Zucchini and Rice Casserole is a recipe I found on Cara's Cravings, a blog that was brand new to me.

A classic Italian preparation is the Roast Zucchini from Exploring the Silver Spoon.
