We recently polled our community of creators, bloggers, and entrepreneurs for easy breakfast ideas they rely on in a pinch for busy days, and man, did they deliver.
For instance, who among us doesn’t love a little savory something to start the day? Siobhan Alvarez of Mimosas and Motherhood (such a good blog name) puts her own twist on the classic egg brekky with her Artichoke and Spinach Breakfast Casserole. “This is a staple in our house! It’s full of healthy veggies and protein, and is a breeze to whip up on Sunday and heat up slices during the week,” she said.
Turns out our community really, really likes oats, too, and we don’t blame them. These recipes look delicious, insanely easy, and highly nutritious. For Randa Derkson of Randa Nuitrition, it’s gotta be her own Strawberry Rhubarb Protein Overnight Oats. For Shobelyn Dayrit, it’s the Skinny Pot’s On-the-Go Breakfast Overnight Oatmeal. “I make this overnight breakfast all the time. So simple, delicious, and healthy,” she said.
Bonus points go to Carole Jones of My Kitchen Escapades, who shared a recipe even her kids adore. “Our family loves oatmeal but can’t stand the quick or instant versions so I created my 2 Minute Whole Oats Oatmeal in the microwave!”
Daniela Lambova of Dani’s Cookings and Jen Cowan of And Hattie Makes Three came through with the pudding for breakfast recipes! Dani shared a Keto Chia Pudding recipe that’s “not only super tasty and full of nutrients, but so pretty – and you can make it 1-2 days ahead!” Jen’s chia pudding recipe is only three ingredients, making it the perfect pantry staples dish for hectic mornings.
